
FIORE SARDO DOP
A cheese produced in the territory of Sardinia with whole milk of sardinian sheep.
The “Fiore Sardo” has a definite and distinctive perfume. It is seasoned for a long time, it is very digestive and suitable for the diets of athletes.
When it is very fresh, it is very tasty as fresh cheese for meals, for snacks, fried or roasted.
After seasoning it can be used as grated cheese on any type of pasta , soups or “polenta”; but it is great also with roasted potatoes or with cold cuts, fresh tomatoes, onions and red wine.
It is also traditionally indicated as the ideal pecorino cheese for the preparation of “pesto genovese”.
The “Fiore Sardo” is one of the 31 italian cheese with denomination of protected origin (D.O.P.) but it is the only italian sheep cheese produced with raw milk; thanks to this procedure it keeps a variety of perfumes, flavours that may not be found in the other cheese produced with pasteurized milk.
It is entirely hand produced in the total respect of european community regulations.
Much attention is given to pastures and to the health of the animals.

SA MARCHESA
The flavour of the exceptional milk, the skilled ancient tradition : from these two ingredients derives “Sa Marchesa”.
The milk of our sheep has the flavours and perfumes of the pastures of the mediterranean forests of the land that only Sardinia can offer.
With the wise preparation of this cheese with raw milk according to the traditions of sardinian sheperds, to perserve the characteristics without any preservatives, from these procedures derive “Sa Marchesa”, a sheep cheese with a wonderful whole taste; attractive if it is eaten fresh, lively if it is a little seasoned.

FOZ’E MURTA
“Foz’e murta” ( leaves of myrtle ) is produced in the “tanca Sa Marchesa” in the countryside between Paulilatino and Fordongianus.
In these territories, basically all virgin pastures, the cattle feeds on herbs with typical flavour of the mediterranean woods that offers to the milk and its products a wonderful aroma.
The milk according to tradition is used “raw” ( not pasteurized ), so all the characteristics are preserved.
During the phases of production the juice of myrtle is added absolutely natural without preservatives.
BARONE
“Barone” is a sheep cheese flavoured with sardinian wild tyme. It is produced with raw milk (not pasteurized) in Mr. Giuseppe Cugusi’s Farm “Sa Marchesa”.
This speciality is created by a great idea : to combine the tasty flavour of sheep cheese with the characteristic sardinian tyme.
The result is a cheese with a very unique flavour, full and aromatic that is a pleasure for the palate and recalls the perfumes of sardinian nature.
